Aunt Jemima’s Super Apple Pancakes – 1956
SUPER APPLE PANCAKES
6 medium Michigan Flavorbest apples
2 cups sugar
2 cups water
1/2 c. cinnamon
1/8 tsp. nutmeg
Boil syrup five minutes. Add apples which have been cut in quarters or eighths. Cook slowly until apples are done. Prepare one recipe Aunt Jemima deluxe pancakes made according to directions on package. Place a wedge of warm apple into each hot baked pancake, folding same around apple. Secure with toothpick.
Place in shallow baking dish in slow oven (325) to keep warm for a few minutes until serving time. For frosting combine
2 tbs. butter or margarine
1/4 cup Michigan Flavorbest apple juice
1 1/2 cups confectioners’ sugar
(add more juice if thinner frosting is desired) and drizzle this over the pancakes before serving.
